All this talk of building a better burger encouraged me to go out and buy a kitchenaid meat grinder attachment. Does anyone notice that this black ooze looks very similar to the black ooze that might be found around a previously clean oiled or greased bearing. My brand new kitchenaid artisan 5 quart model ksm150ps purchased in the past week in march 2016 had the same problem of grey residue around the bowl. Kitchenaid also recommends using a powdered cleaning agent designed to remove oxidization to remove this residue. But in the meantime.
When the meat is not extremely cold or partially frozen the fat in the meat can build up on the knife blade and slow the processing down.
